Indeed, and it's the Sutherland Class, which is now also canonical as it appeared in Picard Season 2.
This one's harder to call - the Sutherland would be much more advanced than the Bounty, both have veterans of war and combat in the chair, but one of them is Kirk and the other... isn't. I think if it was a straight fight between the 2 ships, then the BoP is done for - but Kirk would likely have a bluff tactic and plan up his sleeve to turn the tables.

I think if it was a straight fight between the 2 ships, then the BoP is done for - but Kirk would likely have a bluff tactic and plan up his sleeve to turn the tables.
I'm going Bounty on this one, and given what we saw from Star Trek IV, I think they earn bonus points if Spock taunts them with "colorful metaphors" and concern for whales to be allowed to self-determine their fate as part of the bluff tactic.

Alright. I'm going with H.M.S. Bounty. A Nebula is tactically superior, however BOP's have been proven to be quite strong and can easily out maneuver a Nebula Class. After all it's James T Kirk in command...

Kirk is a great captain, but the Bounty was running on a skeleton screw, the Sutherland is 82+ years ahead of the Bounty and it was built after the battle of Wolf 359 so I'm guessing it had some advancements Starfleet was working on to help combat the Borg.
The Sutherland gets my vote.
