Not a bad take on the subject and one that makes sense.
Something along the same lines has cropped up in TNG - some of the earlier episodes had holographic displays popping up from the tables, though this was quickly dropped because of the costs.

Yup i think a lot of this boil down to the tech available to make the things looks good on screen. So early TNG episodes with it cost way too much and it was canned. I'm sure the TOS view-screen was initially meant to be a holographic one too, i read that somewhere it think.
If Gene had access to the CGI that the guys making DSC have then we'd have seen plenty of amazingly fancy looking technology. Sadly he didn't so we got the cheesy 60's cardboard sets and big plastic buttons.

I don't think that there's anything inherently wrong with shonky looking sets with plastic buttons. It only really looks weird when they try to do super futuristic stuff with them.
"Scotty, we need you to rebalance the warp core by reversing polarity through the dyson manipulators, or we're all dead!"
"Aye sir! Quick crewman, press that green plastic button while I throw these two plastic switches and then move a slider."
I look at the series as historical documentaries, trying to convey the technology with different budgets. TOS is the fan made version with little to no budget, whereas Discovery is the highly funded network show so it can afford all the shiny effects. That's how I stretch my head around the tech gap in series.

Yes there's nothing wrong with the older style really, it's just one of those things i always find funny when people complain about things like ENT, DSC or the JJ movies looking "too advanced" for the period.
The effects have massively changed over time and the look will always change, but the underlying idea is still consistent. The warp engines work the same way, transporters always have those bar things you push up/down etc.
And the old TOS sets do have a lovely charm to them, they represent well the era they were made in as well as what they are meant to show.

I think it's a reach for TOS, BUT, a welcomed reach. Watching TNG as a kid, I use to freak out that the angle changed and realized production was emphasizing that type of tech. At the time though, there were no other open ST fans in a 50 miles radius from my house hahaha
