Kirk's definitely an anything that moves sorta guy, but I can't help but think that sounds like them shoehorning it in just because. Though, in the end it comes down to how they handle it. For example Stamets and Culver on Discovery seemed perfectly normal, they explored the relationship and how it changes due to circumstance; Raffi and Seven, meanwhile came out of nowhere. I don't have a problem with it, but it's literally completely random, no build up at all. So if we can have more of the former and less of the latter, that'd be great.

Exactly that! We've seen it already in the Kelvin Timeline, where J.J. Lensflare made Sulu gay just because Takei is gay and brownie points. I mean even Takei himself said that it is "really unfortunate".
It's a problem each and every franchise has these days, that the writers and producers are so devoid of talent, creativity and original thought that they have to retcon/destroy 30+ years established canon to convey their (in my opinion stupid) message.
There is this channel, Major Grin, who just cuts old and new content together to show how idiotic and dumbed down Trek, Star Wars ect. has become. It's really worth a look, plus it's funny AF.

Destroy seems a bit strong. Bad writing abounds through all eras of Trek which has always been as SJW as they come (a black woman in a somewhat prominent roll? Next to an Asian and a Russian? HOW SCANDALOUS).
It's less bad writing and more sloppy writing. Personally, I think Discovery season 1 is in the upper tier of first seasons (TNG's first season especially was a total dumpster fire). Sure the Burnham is Spock's adopted sister is unnecessary pandering for sure, but it doesn't really harm the canon any more than Spock's half brother that's never been mentioned before or since the one movie even if it is every bit as stupid, and they actually made decent use of it in the second season. Similarly, making Seven Bi doesn't really diminish her character, and can even make some sense; even by the end of Voyager, she's still finding herself, and what relationships she had were pretty cringe-worthy, so they aren't any standard to hold the character up to.
Again, the problem is the sloppiness of it all. Pacing has been all over the place, and there's been a number ass-pulls. The magic hand device in Picard is just as out of nowhere as the finale hand-holding, but none of that really steps out of bounds of established canon or tropes.

It was a deliberate choice, just look at Star Wars. Ships now need litteral fuel (in the real Canon everyone used Ion Thrusters. Capital Ships and Tie created their own power to run them, everything else used Power Cells), Hyperspace Travel was stolen from Space Whales and can now be used as a weapon and in the newest Book "Light of the Jedi"
As for Trek I have to take a look, I'm a way bigger Star Wars nerd than Star Trek... But the handling of Section 31 would come to mind spontaneously.
Never said that. But there is a difference between doing it with doing it with nuance and respect to the subject matter and just jamming it down your throat because "it's the current year".

I mean, where to start on this one, the fact that you say "imagined orientation of the day" shows your distaste, and therefore shows that you aren't someone who "doesn't care" about these matters. Additionally, not caring is definitely more racist/homophobic than trying to do something about the issues of race, sex, gender, and sexual orientation, among other things.
Are there bad implimentations of the issues of equality in media? Yes, there are, but should that detract from the message? No. Additionally, we have not seen how a bi-sexual Kirk would act, unless the episodes have already been screened, or you have had a sneek preview, so I think judgement should be reserved to see how such a character change is implemented. At the moment, it is just an idea.

And as for Kirk maybe become Bi... I already stated my distaste for people meddling in canon. If Roddenberry ever had plans for Kirk being that way I'm 100% sure he'd made it happen.
