IIRC, in the Destiny novels when the Borg made a massively aggressive push into the Federation, one Starship did exactly this maneuver which did destroy a cube. I do concede that books aren't officially canon though.

Matter can collide with the ship when at warp, thats why they need a deflector dish and this gets to the crux of the matter. At huge speeds, even a grain of sand could cause major damage despite it's size. Another factor is that borg seem to be more vulnerable to kinetic attacks over the standard weapons of the time, demonstrated by Picard with the tommy gun and Worf with his blade.
It's not about how much of a warp core size it has, if you're going down this path of ramming, it's the sheer kinetic force of impact relative to speed that's going to ruin someone's day and the bigger the object, the more it's going to hurt. That energy has to go somewhere and it's going to go into whatever gets hit. This is the real life principle of a rail gun, it needs no warhead beyond a solid slug of metal as the speed and force of the impact is enough to do the job.
Think of it in these terms - if you drive a car into a wall at 1 mile an hour, you're going to mark the paint at worst. Do the same thing at 100 in the same car and you're going to effectively destroy it and the wall.
There's another fictional example of this in H.G. Wells War of the Worlds. The HMS Thunder Child was a Royal Navy ship protecting a civilian refugee convoy. Much like the Enterprise, she couldn't get past the Martian defences with her guns and resorted to a full speed ramming attack in a last stand. It worked, destroying the Martian walker, but also the Thunder Child herself.

That is true but a Warp Core is designed to propel the ship it is build in, and not to carry another ship with it and definitely not to expand the field around a ship that is a few kilometers in size. We should also not forget that the Borg would notice that and take countermeasures, the Enterprise had no shields and was saved by it's plot armor.
Edit: We also have to take in account how powerful a Warp Core explosion is, in All Good Things the three Enterprise were very close together and none of them took damage from the explosions.
Than we have the Warp Core Breach from Generations that hit the Saucer but also didn't do much damage and the if the planet would not have been there the Saucer could have been recovered.
Than we have the Dominion War, every exploding ship would have been and exploding Warp Core yet there was I think only once collateral damage when a ship exploded.
Last but not least Borg ship have shields and while Phasers could briefly penetrate them not a singe Photon Torp could.

I was getting "Event Horizon" vibes in this statement... I think they touched on a bit of the theories of what you were mentioning... I am just not a fan of warping into the hell dimension.
If the Borg are that susceptible to kinetic damage, then why couldn't Starfleet research and produce kinetic railguns much like that TR rifle in STO but mounted on a ship to takedown Cubes? I am almost thinking of that VOY episode "Warhead" with autonomous WMD's, would be super cool and almost wonder if it could take on a Cube itself.

That theory might be a bit overrated, keep in mind that Torpedo's are projectiles until they hit the target and explode and the only time we have seen projectile weapons work were against two Borg Drones simultaneously we have seen more Drones taken out with Phasers until they adapted and the Borg would adapt to Bullets to.
