The Galaxy class already has whales on board as part of the navigation system. No need to travel back in time in a dinky-ass BoP!
We may yet prevail. That's a. . . a conceit, but it's a healthy one. I wonder if the Emperor Honorious watching the Visigoths coming over the Seventh Hill truly realised that the Roman Empire was about to fall? This is just another page in history, isn't it? U.S.S. Enterprise (Galaxy) because its the Enterprise yes the Jem bug ships took out Captain Keogh and USS Odyssey but would Picard and his crew fair the same if it had been them I would think not and Captain Keogh sacrificed his ship for others to escape very noble indeed and yes I know its Siskos bug we are looking at that does not change things. After all, it's the Enterprise.
All things equal, gotta go with the Enterprise on this one. A larger crew composed of the Federation's finest selected to serve on the fleet's flagship. Plus, all crew are much more familiar with their ship's abilities and equipment and would be able to turn some sort of technobabble wizardry on Sisko's ship if weapons failed them (bonus points if it involves the rubber ducky room). Just...don't leave the driving to the ship's counselor.
As much as I love DS9 and I believe Sisko's team is certainly capable, the Jem'Hadar ship was designed to centralize control with the ship's commander, which would slow their tiny crew's ability to coordinate and capitalize on any openings. I think they could maybe give the Enterprise a bloody nose, but I think the only way the attack ship could stop the Enterprise would be a suicide run, which isn't really Sisko's style and for the purposes of this tournament would be a draw.
Don't all Federation ships have whales in? An important part of every ship!
I do not believe that all Starfleet canon ships have Cetacean Navigation Labs. The Defiant, the Equinox, Voyager, and several other smaller ships simply didn't have the deck space for aquariums and other life support systems required to maintain Cetacean Ops. But the bigger cruisers, carriers, and battlewagons certainly did.

Sisko's Attack Ship would win.
1.) The Enterprise-D would be as unprepared as the Odyssey was against the Jem'Hadar attack on the ship.
2.) Sisko's attack ship is at this time operated by combat proven crew that have learned to combat Dominion Ships so they know the capabilities of that ship and the Enterprise-D Crew never had to fight in close combat that the Attack Ships forced on Starfleet.
3.) Chief O'brien is on board Sisko's ship and is not only a genius engineer but is also very familiar with the Systems of a Galaxy Class ships and their weaknesses.
4.) The producers of DS9 wanted the Odyssey to be a Galaxy Class to show the audience that not even Picard would have had a chance against this new enemy.

5.) The Jem'Hadar were playing with the Odyssey until their plan worked to get their Spy into the hands of the Federation once completed the Odyssey has fulfilled her part they destroyed her.

While true the Odyssey was lost in combat with the Jem Hadar and had restricted speed/maneuverability due to the damaged nacelle, it ultimately only went down because it was rammed straight in the deflector dish, which also damaged the other nacelle and led to a core breach.
You could also make an argument to say it would be a draw since one ship had to destroy itself to end the other, or to be really pedantic about it, it's Sisko aboard and he has no logical reason to destroy a Galaxy class.

I mean even thought your argument is very logical, the Enterprise D is capable of firing what 10 photon torpedos almost at once with multiple phaser fire at the same time. I think I go with Enterprise-D on this one. Another thing is Galaxy class were always nerfed, sometimes they were pure strong and other times it got defeated by a 50 year old BOP. https://www.youtube.com/watch?v=H_XbWq49vUM
Skip to 1:03 minutes and you'll see a Galaxy Class is definitely strong.
Also Galaxy Class were able to hold their ground even against a Borg Cube for a while.
I voted for Sisko's attack ship, I agree with everything Bridger has said and have one thing to add.
Back when the Dominion war started Starfleet had no defense against their polaron weaponry, shields were almost useless. We've all seen how even a simple older era discontinued bird of prey just overpowered the Enterprise D when shields were useless, now take that and add Sisko's crew who are not only battle tested they have a lot of experience flying fast and agile vessels.
I always assumed Starfleet magically upgraded their shields after the Odyssey got destroyed or something like that.
They definitely still use the Galaxy-class ships later in the Dominion war (fairly sure Sisko says something about Galaxy wings in the big space battle in "Sacrifice of Angels"), don't think they'd have kept using them if one bugship could reliably take a Galaxy down.
I think it was in "Call To Arms" (S5-E26) that while attacking DS9, the Dominion realised the main advantage their polaron weapons gave them had been nullified as it was mentioned during the battle that the station shields were holding, which invoked surprise from Weyoun. Dukat then mentioned that if he'd learned anything, it was to never underestimate the Federation, "especially not their technological expertise".
That was something of a thread through the conflict, the prowess of Starfleet engineers was noted in the Dominion and they were regarded as being able to make "replicators out of rocks".
