Right now I've been working as a security guard for 4 years with the same company, and it's pretty much dead ended for me in terms of advancing and wage ceiling. I've been doing 3 years of that working night shifts (0000-0800) full time, and I'm starting to burn out. Management and my direct supervisor have been doing things that give me the inkling that my future with the company is limited. They've also taken actions that I didn't agree with or thought weren't ethical (although not illegal) that negatively effected me.
So I did the smart thing, I looked for other work to shore up my options, and I got a call for a job with another security firm. They're offering $20/hr, 12hr shifts (OT after 8hr), 4 on 4 off rotation, with $30/shift travel reimbursement. Benefits are the same as what I have now, except they're offering Optical. It's also unionized (although I don't know what union).
The initial call that set up the interview made it sound like they were looking for someone right away (considering that this is for a health care facility with COVID-19 going on, I'm not surprised), asking for my uniform size and photos of my credentials (Security licence, various certifications, etc). And when I mean right away, it sounded like the same week.
Reviews for the company are mostly positive, with only gripes being about the union being toothless in some cases.
That would mean I would have to quit my job no notice, which I'm not comfortable with, but the nearly triple pay increase is to much to ignore, but the desperate is throwing some red flags.
I'm worried that if I take this job, burning my bridges with my current employer, and the new one falls through, I'm up ♥♥♥♥ Creek with no paddle during a pandemic and depression level unemployment.
Its 0630 right now, and the interview is at 230pm.

From a practical standpoint, how many firms are around with the potential to hire you? Is it just these two? Could you continue to find work if your current employer were no longer an option?
would the new employer let you give them just one week?
Would the shifts align at the new employer that may let you give the old employer notice on a part time basis for the few weeks?

There are at least 6, only 4 hiring, my current employer included, 2 of which I wouldn't work for because they have a history of stiffing guards.
As for giving notice with my current employer, they have black listed employees that left on good terms unless they were former zone supervisor or above (middle management, so above my direct supervisor). Shift availability would make any kind of working both for short term impossible. Shifts would not match up any ways.

Something to keep in mind with your current employer. If you are burnt out already due to the company culture and lack of career development and advancement opportunities now, is it some place that you'd really want to come back to anyway? Organizational change is an extremely slow process when a company is actively trying, and it sounds like your current employer probably isn't even trying. Based on what I'm seeing about security guard pay in Alberta on Indeed Canada, it sounds like your current employer is paying you well below the average pay for your job and province too (the average appears to be $17.55/hr).
The second thing you might consider is whether you can feel out how firm and how quickly the new company is moving on this new job you are applying for. One of the questions I like to throw interviewers if they don't tell you outright is to provide a general timeline of their process (e.g., Are there more interviews or other assessments? When do you anticipate those future assessments and a final decision to be made?). Usually if the employer is serious about filling the position, they will provide some sort of high level feedback.
The last thing you might want to consider is if you do fall out of work, are you willing to look beyond just security roles? Certainly understandable if you want to stick to your field, but taking an interim job in another field if you need to wait for a new security job to open up might be something to consider, either to get your foot in the door with an employer to maybe transfer into Security when something opens, or just to wait out things while you apply to other security jobs as they pop up.

I don't know how it is in Canada, but in the states, an employer won't hesitate to let you go w/no notice what so ever, whether you've been with them 6 months, 1 year or 10+ years and just replace you or cut down the number of positions. So my take w/employers now a days is, you do you man. There's no reason to feel bad about significantly improving your financial situation and personally I'd jump to the new job the second they offered me a position .

In Canada, there are some protections for employees at the provincial level (although the Alberta Conservative government has been clawing back some of them recently).
For my work to let me go with out cause, they'd have to pay out severance in lieu of notice ($$$) or give me 4 weeks notice.

I worked as management in a private security firm for 15 yrs until this summer when I was made redundant (this was the result of the current pandemic; so i hold no grudges).
So I've got a different point of view to many; plus i'm in the UK so legislation and many other aspects are quite different.
Over here you needed a government issued licence to work which meant an initial outlay for staff but should have meant you were more valued after that. Sadly it didn't really reflect that in the pay but I feel it did keep some of the dregs of society out of the job meaning your colleagues were at least mostly capable. We had some top quality people from all backgrounds working for us (ex-army/navy/airforce, graduates, close protection, merchant navy officers, and a heap of other industries); an absolute tonnes of experience between them.
The industry is often misrepresented and as such pay is wildly variable between elite "ex-military" type of companies charging a fortune and paying reasonable well and dead-end trash outfits that just hire idiots and pay crap. As such the experience of many can be all over the place depending where you work.
From my point of view if a member of staff could find a better life elsewhere i'd wish them all the best and never hold it against them. If they are a hard worker then i know they will go far eventually when they find the right place.Sadly many companies are severely limited by clients who expect gold-standard services but insist on paying peanuts.
My view is go for it. You've got nothing to loose if you think the current employer is lining you up for the chop.

Well, I got out of the interview, which went very well.
The two gentlemen that were there were very informative and I was wrong on what kind of job it was. It was a security and access control contract for a Solar Power farm in a town about 45 min away from where I live. Just basic drive around, check things out, I'd have a partner for safety.
I took the job, the money was too good to pass up and the impression the interviewers gave was very positive and put a lot of my concerns at ease.
I then went to my old work and gave notification that I would be leaving immediately since I would be starting work either Wednesday or Thursday this week, saying that the reason was purely financial.

Congrats on the new job. I know a few people in the energy industry out in Alberta having done some environmental research out there myself during my undergrad. Security for energy assets isn't a bad gig, and the career development opportunities from it are pretty good as well if you get the opportunity to learn about security risks to the energy sector. You made the right call in my view. You were right to be concerned about the reputation issues of leaving suddenly. I always worry about that sort of thing because I don't want it to leave a bad impression on any new employer, but it seems like they were happy to have you and the interview was a formality anyway.

I have a policy in life - never burn bridges.
I'm gonna assume you have researched on your new company already since you have discussed compensation. Make sure they can provide stability, especially during the current period. Because at the very least, your current firm is giving you that.
In current scenario where a lot of industries are struggling and employees being laid off - stability is king. So any red flag you feel or questions you have regarding your future in the new firm, ask your interviewers about them. Always discuss things before hand because once you joined, the contract's already hammered down with company's having the upper hand of letting you go.
Correct me if I'm wrong, however, you still need to get an actual written offer letter? Always have it written down man, don't leave it to words. Once you have a written offer letter with mutually agreed compensation, it's concrete. You can let your new employers know that now you are comfortable giving your current firm a notice period.
When you approach your current firm don't express any personal feelings. You've got a good opportunity at your hands during a panademic - that's nothing to be sad about. Either way, companies RARELY want to match up a triple pay hike in salary. This is where you can choose to either
a. Be honest : Tell them you got a better offer which can subsantially improve your quality of life under current circumstances
b. Personal Reasons : Say you are figuring things out and need to handle things on personal level.
How you explain them is totally your call, since only you know what kind of relationship you have with your current firm.
When I was working in US, the standard notice period is usually 2 weeks - with a non compete clause usually if you are in the tech space. So from there you can communicate to your new firm once it's all done with your new joining date and that you'll meet them then.
Just make sure to always keep your new employers updated everyday and all the time. Because if you break communication or go "silent", they may think you are not interested. Do your best to leave your current company as amicably as possible. In the end if the dude wanna get pissed, dude's gonna get pissed. You can keep your cool and at least not responsible to burn bridges.
